Sweet Potato Burritos!

I love sweet potatoes!!! So I thought I would try this out!!
 Got this recipe from my favorite recipe site, allrecipes.com, but of course I made some changes.

First major change, I cut the recipe in half and it made 5 big burritto's.



Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 6 cups canned kidney beans, drained
  • 2 cups water
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 4 teaspoons prepared mustard
  • 1 pinch cayenne pepper, or to taste
  • 3 tablespoons soy sauce
  • 4 cups cooked and mashed sweet potatoes
  • 12 (10 inch) flour tortillas, warmed
  • 8 ounces shredded Cheddar cheese

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Heat oil in a medium skillet, and saute onion and garlic until soft. Stir in beans, and mash. Gradually stir in water, and heat until warm. Remove from heat, and stir in the chili powder, cumin, mustard, cayenne pepper and soy sauce.
  3. Divide bean mixture and mashed sweet potatoes evenly between the warm flour tortillas. Top with cheese. Fold up tortillas burrito style, and place on a baking sheet.
  4. Bake for 12 minutes in the preheated oven, and serve.

* I didn't have: cumin, chili powder or soy sauce. So I put in more cayenne and taco seasoning.  Also I didn't use all the water (1C) and the consistency was perfect because I didn't drain the beans.  

This was a very yummy recipe and we decided it was a keeper!

Something New!

A while back I had a friend of mine trying to get me to do a food blog and post all of my "supposedly good" recipes.  So I finally caved and thought I would do it.  Anyone who knows me well, knows that I love to spend my time in the kitchen!  I absolutely love cooking!!!  It is my therapy, my getaway.  However, in order for me to get really into it I have to have a decent work area.  So unfortunately I haven't been able to do some really awesome things because I live in an apartment and have the most unconventional kitchen.  In fact it actually discourages me from cooking.  Sad, I know :( 
So someday I will have the most amazing workable kitchen!

  
I graduated with a degree in Family Consumer Science Education.  Let me guess what you are thinking, "Huh?  Family..wha..."  In other words, Home Ec, but they changed the name years ago.  Anyway, so I teach the fun classes: cooking, food science, Nutrition, interior design, sewing, adult living, child care/parenting, preschool, home, family & money management, and fashion.  I know, it is quite the load, huh?!  But just because I teach all those subjects doesn't mean I am an expert in each one either.  But I love learning and each day I continue to study in each of those areas.  


So this blog is going to be dedicated to all my fun little recipes and things that I like to create.  I really don't like following recipes.  I usually do my own thing, sometimes it works and sometimes it doesn't.  
So here we go!!
