Guest Post - Chocolate Chip Cheesecake Bars

Alright you cannot resist these little babies!  They are ooey goodie yummy!  Try them out!
Got the recipe from our friends over at Heat oven to 350.


Chocolate chip cookie layer:

1/2 cup unsalted butter
1/2 cup butter flavored vegetable shortening
1 cups brown sugar
1/2 cup granulated sugar
2 tsp vanilla extract
3/4 tsp salt
1 T cider vinegar
1 large egg
1 tsp baking soda
2 cups all-purpose flour
2 cups semisweet chocolate chips

Cheesecake layer:

1 package (8 oz) cream cheese, at room temp
1/2 cup sugar
1 egg
1/2 tsp vanilla

Directions:

1. In a large mixing bowl, cream together the butter, shortening, sugars, vanilla, salt and vinegar. Beat in the egg, then the baking soda and flour. Stir in the chocolate chips. Divide the dough into two equal portions and set aside.

2. In a medium mixing bowl cream the cream cheese with the sugar until thoroughly combined. Beat in the egg and vanilla. 

3. In a 9x13 pan, spread 1/2 of the cookie dough mixture evenly across the bottom. (This is somewhat tricky to do. I find it easier to add dollops of cookie dough throughout the pan and then spread all the dollops together. Spread the cream cheese mixture on the top of the cookie dough. With the remaining cookie dough, flatten chunks of dough between your hands into discs, and then place on top of the cream cheese mixture. (The dough discs don't have to touch, just place them near each other so they cover the surface as well as possible.) 

4. Bake at 350 for 35-45 minutes, or until the top is brown and cooked through. Cool completely and store in the refrigerator.

(To make this in a sheet pan double the recipe and press into a 12x17" sheet pan. The cooking time is slightly shorter.)

Another Guilty Pleasure

Anyone who knows me well, knows that this place...

is a little bit of heaven on earth for me!!!


I mean look at all these beautiful creations!!!!


 Further more, for those who know me well, you know that my absolute favorite is Birthday Cake Remix. In one word... AAAAAAAAAAAAmazing!

Colby always gives me a hard time when we go out to places and I get the same thing.  He sometimes forces me to try something new.  Well, here is my theory.  When I find something I REALLY like, I stick with it.  Especially because we go so very little that when I do go I want my favorite!  Why spend that money on a new flavor that I am not sure how I will feel about it than use the money on something I know will be good and not take the chance of spending money on something I don't like when I know I would have been happy with my favorite!  Sorry, I need to calm down.

Well, I have seen the light.  I went out on a limb and found another creating that tickled my fancy!


We went last week with one of our coupons we get in our email from them, hello - coupons and free ice cream on your birthday, not passing that one up. 


 But we went in and I saw.... Cinnamon Bun Batter Ice cream!!!  Well, again, I am obsessed with cinnamon and I'm always stocked!  I just had to try it. So I got the Cinnamon Bun Batter and added Apple pie filling to it.  Oh.....MY.....GOODNESS!! Heaven!!!

So what is your favorite Coldstone creation??? I am curious and maybe you can persuade me to try a new flavor, but I am pretty stingy.

Homemade Oreos!!!




One of my guilty pleasures!! We all have one right??? Well, oreo's are one of mine.  But if they are store bought I can only do the double stuff kind.  Oh soooo yummmy!!! (and so easy)

1 box of Devils food cake mix
3/4 C oil (you could use applesauce as a healthier substitute)
2 eggs

350' 8-10 minutes

Frosting (i don't have an official recipe, I just do it as I go - sorry)
couple handfuls of powdered sugar
1/2 stick of butter softened
about a cap full of vanilla
enough milk to make it the right consistency

I just taste it and add more of whatever till I like it!  That is what is so great about cooking you make it just how you like it!
